Recipe: Carrot Cream Cheese Spread

Carrot Cream Cheese Spread

This makes a good sandwich spread.

3 ounces cream cheese
2 Tablespoons salad dressing or mayonnaise
2 celery leaves
2 large carrots, diced
1 sprig parsley
1 teaspoon salt
1/2 cup raisins

In a blender, mix the cream cheese, salad dressing or mayonnaise, celery leaves, carrots, parsley and salt. Blend on high for 1/2 minute. Scrape mixture down and continue blending until carrots are finely chopped.

Add the raisins and blend a few seconds on low to coarsely chop them.

Chill well before serving.

Yields 1 cup
