Since you will be using butter ANYWAY on the potato...
Use that butter to saute shrimp or crabmeat (or crawfish), along with finely minced onions, mushrooms, chives, etc., and add that mixture to the potato pulp, along with sour cream and other stuff. Whew! It's too close to lunch time to be talking like this!
Another tip: after scooping out the cooked potato pulp, lightly season the inside of the potato skin before filling with the prepared stuffing. This is a good time to add fresh herbs or herb salt...or just a little salt and red pepper. The heat of the filling will draw together the filling and skin flavors.
