CORNISH GAMES HENS
(Nesco Roaster Oven instructions)
4 Cornish Game Hens (3 1/2 to 4 1/2 lbs. total weight)
Preheat and roasting temperature:
425 degrees F
Approximate Minutes per Pound:
20 to 25 well
Preheat 12 Qt. Roaster Oven for 20 minutes.
Minutes per pound are ONLY A GUIDE. For more accurate roasting, use a meat thermometer. Set Meat on Rack to roast.
* To obtain additional browning on poultry, mix 1/4 cup melted margarine or butter with 1tsp. browning sauce; brush evenly over skin before roasting.
* For crisper skin, baste, then remove liquid during roasting.

Here are the basic instructions from Nesco for roasting Cornish Game Hens. You can use a larger roaster oven and more birds. The temperature and minutes to roast per pound will be the same. Depending on size they may not need so long to cook - I would rely on your oven thermometer. Also, I would put them on a greased rack if you have one for the roaster. If you don't you can use a bed of carrots and celery (and onions if you'd like) to raise them off the bottom or even some crumpled aluminum foil. If they sit right on the bottom they may fill with the juices and get a little waterlogged.
