Recipe: Seedy Noodles

Main Dishes - Meatless
SEEDY NOODLES

Noodles mixed with flavorful seeds and nuts make a quick and easy main course for a meatless meal, especially when paired with a green salad or steamed vegetables.

FOR THE NOODLES:
8 oz noodles or pasta
3/4 cup plain nonfat yogurt
1/2 tsp cornstarch
FOR THE SEASONING OPTIONS:
1 1/2 tsp crushed fennel seeds
2 tbsp tomato paste
3 tbsp raisins soaked in 2 tbsp hot water
OR:
1/4 cup slivered almonds
2 tbsp poppy seeds
OR:
1 1/2 tsp crushed caraway seeds; toasted
1 tsp dried thyme
OR:
1 tsp crumbled sage
1 tbsp onion seeds
1 tsp minced lovage

Cook noodles according to package directions, drain, and pour into a heated casserole.

Combine yogurt and cornstarch; stir in chosen seasoning option.

Combine with noodles, toss and serve.

Servings: 4
