Recipe(tried): Shrimp balls, Chinese way

hi Dewi, Here is one way of doing it. Have fun.

Shrimp balls, Chinese way

2/3 lb. raw shelled shrimp
t. salt
dash of white pepper powder
t. sesame oil
1 egg white
1 T. cornstarch
1 oz. pork fat

Mince the shrimp and pork fat with the food processor or a knife. Put all ingredients in a LARGE bowl. Throw the mixture lightly against the inside of a mixing bowl to blend to a smooth paste (approx. 3 min.)
**Some food processors do a good job to make the mixture a spongy, elastic dough.

To boil/deep fry:
Bring a pot of water/oil to boil/very hot.
Take a portion of the paste in palm of a hand and squeeze your hand to a fist so that the paste is forced out of the space between the thumb and index finger. Use a spoon, dipped in water to remove the formed ball.
Throw the balls in!
** you may use bread crumbs to coat the balls for deep frying, if preferred.For the deep-fried version it’s good to use some peppercorn mixed with salt and roll fried balls in this.
