SALMON LOAF WITH DILL SAUCE
1/4 cup margarine
1 cup finely chopped celery
1 cup finely chopped onion
1/2 cup finely chopped black olives
1 small jar pimiento, finely chopped
1 (15 1/2 ounce) can salmon, boned and undrained
2 eggs
2/3 cup evaporated milk
2 cups bread crumbs
2 teaspoons salt
1/2 teaspoon pepper
Dill Sauce (recipe follows)
Heat margarine and saute celery in it. Remove from heat and add remaining ingredients. Mix well. Spoon into greased 1-quart baking dish (or shape into patties and place on greased cookie sheet).
Bake at 350 degrees F for 50 minutes or until knife inserted in center comes out clean (12 minutes in microwave).
Serve hot or cold with Dill Sauce.
DILL SAUCE
1/2 cup mayonnaise
1/4 cup sour cream
1 teaspoon dill
1 tablespoon lemon juice
1 tablespoon milk
Combine all ingredients for the sauce. Beat with wire whisk until smooth. Refrigerate.
Makes 6 to 8 servings
