Recipe(tried): Shrimp Curry a la Carolyn (south Indian, not too spicy)
MenusWell, this morning all my "guys" are off and out the door by 7:30. So I got the laundry sorted and started, swept up a bit, grabbed a shower and...well, time for a break. So here I am; just me and my coffee and my recipelink pals!
Last night for dinner we had a lovely shrimp curry. I used to have a yummy recipe from a restaurant in Toronto...goodness only knows what became of it! Anyway, there have been a lot of great specials for shrimp lately, so I grabbed a couple from my freezer and went to town trying to recreate that recipe from long ago.
Not quite there yet, but close! And my family really enjoyed it. It is not very spicy, but I did that on purpose. I find it is hard to get full enjoyment of seafood if it is too spicy. Maybe it's just me, but anyway, it was a hit!
Hope you all get a chance to try this, too.
SHRIMP CURRY A LA CAROLYN
1 tablespoons canola oil (I used a non-stick sauteuse)
1 onion, finely chopped
2 jalapeno peppers, finely chopped
1/2 red pepper and 1/2 green pepper, fine dice
2 cloves garlic, finely chopped
1 teaspoon finely grated ginger
1 tbsp cumin
1 tbs turmeric
1 tbsp paprika
1/2 teaspoon chili powder (cayenne)
1 cup canned tomatoes, chopped
1 cup coconut milk
1 teaspoon salt
1 1/2 lbs. uncooked shrimp (prawns), peeled
chopped fresh cilantro (to taste, I used about 1/2 cup)
2 tablespoons lemon juice
Heat the oil in a large saucepan over a medium heat and cook the onion and peppers for 8 minutes , stirring occasionally.
Add the garlic, ginger, cumin, turmeric, paprika ,and chili powder and cook, stirring, for a minute.
Add the tomatoes, coconut milk, and salt and bring to the boil. Reduce the heat to medium and simmer, uncovered, for 8 minutes.
Add the shrimp and cilantro to the curry, cover with a lid, and simmer for another 4 minutes, then stir in the lemon juice.
Serve on a bed of rice.
I served this with basmati rice, naan (a great big fascinating looking one (looks like a huuuuuge tongue!) I picked up the previous day while shopping; something different!), and yogourt dip (the traditional thing is cucumber raita; I had some leftover tzaziki, and that was close enuf for me).
It was quite a feast!
