Recipe: Shrimp with Ginger (Thai)

SHRIMP WITH GINGER

2 tablespoons vegetable oil
2 garlic cloves, finely chopped
1-inch piece fresh ginger, finely sliced
6 to 8 large shrimp, peeled and deveined
1/4 teaspoon ground white pepper
1 tablespoon light soy sauce
1 tablespoon fish sauce
1/2 teaspoon granulated sugar
2 tablespoons chicken stock or water
2 scallions, cut into 2-inch lengths
1 small onion, sliced

In a wok or frying pan, heat the oil and fry the garlic until golden brown.

Stir in the ginger, then toss in the shrimp. Stirring after each addition, add the pepper, soy sauce, fish sauce, sugar and stock or water. Stir-fry together for about 2 minutes.

Add scallions and onion. Stir once, remove from heat and turn onto a serving dish.

Serves 2 to 4 as an appetizer
