Recipe: Sicilian Supper (3)

Sicilian Supper (microwave)

2 cups noodles, uncooked
3/4 cup water
1 1/2 tsp salt
1 lb lean ground beef
1/2 cup finely chopped onion
6 oz can tomato paste
3/4 cup water
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic salt
3/4 cup milk
8 oz cream cheese
1/2 cup grated parmesan cheese
1/2 cup chopped green pepper

In a deep, 2-quart, heat-resistant, non-metallic casserole place noodles, the 3/4 cup of water and the 1 1/2 teaspoons salt. Heat, covered, in Microwave Oven 8 minutes or until noodles are tender. Drain noodles and set aside.

Place ground beef into a deep, heat-resistant, non-metallic 2-quart casserole and heat, uncovered, in Microwave Oven 5 minutes or until meat is no longer red. Stir occasionally to break up meat particles.

Add onions and heat, uncovered, an additional 3 minutes or until onion is tender. Drain excess fat.

Add tomato paste, the 3/4 cup water, the 1/2 teaspoon salt, the pepper and the garlic salt to the beef-onion mixture. Stir to combine. Heat, covered, 3 1/2 minutes or until mixture bubbles.

Add cooked noodles, milk, cream cheese, Parmesan cheese and chopped green pepper. Heat, covered, an additional 5 minutes or until mixture is heated through.

Sicilian Supper

1 lb hamburger
1/2 cup chopped onion
1/2 cup chopped green pepper
1 1/2 tsp salt
1/8 tsp pepper
1 small can tomato paste
8 oz cubed cream cheese
3/4 cup milk
1/2 tsp garlic salt
1/4 cup Parmesan cheese
2 cups cooked noodles

Brown hamburger and drain. Add onions, green peppers, salt and pepper and tomato paste, plus 3/4 cup water and simmer 20 minutes.

Melt 8 ounce cubed cream cheese in 3/4 cup milk; add 1/2 teaspoon garlic salt and 1/4 cup Parmesan cheese.

Layer in the meat mixture, cheese mixture and 2 cups noodles alternately in casserole. Sprinkle top with 1/4 cup Parmesan cheese and bake at 350 degrees for 20 minutes.

Sicilian Supper
8 servings

1 pound ground beef
1 onion, chopped
1 (15-oz.) jar spaghetti sauce
2 cups elbow macaroni
1 (8-oz.) pkg. cream cheese, cubed
3/4 cup milk
1/2 cup sour cream
1 green pepper, seeded and chopped
3/4 cup Parmesan cheese, divided

Preheat oven to 350 degrees. Brown ground beef and onion in heavy saucepan, stirring to break up ground beef. Drain well. Add spaghetti sauce and stir well to blend. Let simmer for 10 minutes to blend flavors.

Meanwhile, cook elbow macaroni as directed on package. While macaroni is cooking, combine cream cheese and milk in medium bowl. Cook in microwave on medium power for 2-3 minutes, stirring once halfway through cooking. Remove from microwave and stir with wire whisk until sauce blends. Drain noodles and add to cream cheese sauce along with sour cream, green pepper, and 1/2 cup Parmesan cheese.

In 2 quart casserole dish, place all of cream cheese mixture. Top with all of the ground beef mixture and sprinkle with remaining 1/4 cup Parmesan cheese. Bake at 350 degrees for 20-30 minutes until casserole is bubbly.
