SISTER MARY BERNADETTE'S 11-MINUTE TOFFEE
"Our Favourite Recipes, a homey little book put out by St. Nicholas Catholic parish in Langley, has a collection of recipes donated by members of the parish. One of the contributors is a cloistered nun at Queen of Peace monastery in Langley. Sister Mary Bernadette says her 11-Minute Toffee is somewhat famous. "I did 600 tins of it at Christmas here at the monastery [to sell]," she says."
1 pound butter, divided use
2 cups finely cut pecans or roasted almonds, divided use
2 packages (6 ounces each) chocolate chips, divided use
2 cups sugar
Grease a shallow 15- by 18-inch pan with 2 tablespoons butter; sprinkle with 1 cup nuts and 1 cup chocolate chips.
Place remaining butter in 3-quart saucepan. Melt over low heat. Add sugar. Stir over moderate heat until pale caramel color or to 300 degrees F, about 11 minutes.
Remove from heat; spoon over chips and nuts. Scatter remaining chips over candy; spread evenly when melted. Sprinkle top with remaining nuts.
Chill until chocolate is firm. Break into pieces.
