Recipe: Sizzling Broiled Tomatoes with Herbs

SIZZLING BROILED TOMATOES WITH HERBS

4 small to medium tomatoes
1 teaspoon salt
1/2 teaspoon white pepper
1/2 cup prepared balsamic vinaigrette
1 cup herb stuffing mix
4 tablespoons (1/2 stick) butter, melted
4 to 5 sprigs fresh basil (optional garnish)

Preheat broiler, positioning rack 6 to 8 inches from heat.

Cut tomatoes in half horizontally. Arrange tomatoes cut sides up on baking sheet or roasting pan. Sprinkle with salt and white pepper. Spoon 1 tablespoon vinaigrette over each.

Place herb stuffing mix in a plastic bag and roll with a rolling pin to crush into finer crumbs. Toss crumbs with melted butter until thoroughly moistened. Divide crumbs over the tomato halves.

Broil for several minutes until tomatoes are heated through and crumbs are browned. Garnish with fresh basil.

Serve hot, at room temperature or cold.

Makes 4 to 8 servings
