Recipe(tried): Small Cheesecakes (using vanilla wafers, baked in muffin cups)

SMALL CHEESECAKES

This recipe is fast and easy to make.It is perfect for any occasion.

2 pkgs (8 oz each) cream cheese
2 eggs
3/4 cup sugar
1 tsp.vanilla
1 tbsp. lemon juice
1 box small vanilla wafers (round)
1 (20 oz) can cherry pie filling
24 muffin cup liners

Place a wafer in the bottom of liners in muffin pan cups. Beat rest of ingredients and pour into cups about 2/3 full.

Bake at 350 degrees F for approximately 15-20 minutes. Let them cool down, then top with cherry pie filling. Refrigerate until ready to serve.

Very tasty recipe. Enjoy!
