Recipe: Smoked Salmon Muffins with Herb Cheese

SMOKED SALMON MUFFINS WITH HERB CHEESE

1 package (3 oz.) cream cheese, softened
1/4 cup minced green onions
1/4 cup minced parsley
1/4 cup chopped fresh dill or 2 teaspoons dried dillweed
1 to 2 teaspoons lemon juice
2 Thomas' English Muffins, split and toasted
4 slices smoked salmon

In a small bowl, mix cream cheese, green onions, parsley, dill, and lemon juice. Spread on each muffin half. Top with salmon. If desired, garnish with additional fresh dill.

Makes 4 servings
