Recipe: Eggs Ranchero (using English muffins)

Breakfast and Brunch
EGGS RANCHERO

1/4 pound spicy breakfast sausage, crumbled
6 eggs
1/2 cup (2 oz) shredded Monterey Jack cheese with Jalapeno peppers
4 Thomas' English Muffins, split and toasted
Salsa, warmed

In large skillet, brown sausage over medium heat.

In large bowl, beat eggs. Stir in cheese. Pour into skillet with sausage. Cook, stirring frequently until eggs are done.

Top each muffin half with egg mixture and salsa.

Makes 4 servings
