Recipe: Cheeseburger Biscuits (using biscuit mix)

3/4 lb ground beef
1/2 cup onion, finely chopped
1/4 cup celery, finely chopped
2 tbsp vegetable oil
1/2 cup water
1/4 cup tomato paste
1/4 cup chopped ripe pitted olives
1/2 tsp Worcestershire sauce
1/2 tsp salt
1/4 tsp chili powder
3 cups biscuit mix
1 cup milk
2 slices American cheese, halved
Saute beef, onion, and celery in oil until vegetables are tender.
Add water, tomato paste, olives, Worcestershire sauce, salt, and chili powder mixing well; simmer 10 minutes, stirring occasionally. Set aside.
Preheat oven to 375 degrees F. Grease a baking sheet.
Combine biscuit mix and milk, stirring until a soft dough is formed. (More biscuit mix may be added, if it is needed.) Beat vigorously 30 seconds, and turn out on a lightly floured surface; knead about 10 times.
Roll the dough to 1/2 inch thickness. Cut into eight 4-inch circles; place 4 dough circles on prepared baking sheet. Spoon 1/4 of the meat mixture onto each, leaving a 1/4 inch border; top each with a cheese slice. Place remaining dough circles on top, pressing the edges to seal.
Bake at 375 for 25 minutes or until biscuits are golden brown.
