Recipe(tried): Chiaparellis House Salad Dressing - Tips

My husband and I have eaten at Chiapparellis for quite a long time. Here are a few added hints regarding their salad gleaned from various waitresses over the years.

Firstly, the restaurant uses Gemma Olive Oil in the dressing.

Secondly, when using cut tomatoes, the tomato chunks get put into the dressing before anything else so they get coated in the dressing. Same goes for halved cherry tomatoes. If using whole grape tomatoes, you can just throw them in at the end along with the lettuce.

Thirdly, when seasoning the salad and tossing it, sugar is sprinkled over it lightly in the same manner as if you were seasoning with salt or pepper. (I've never heard of the Sweet & Low addition noted by another contributor.)

I wish I knew the type of vinegar used. Anyway, good luck!
