Recipe(tried): Solo Menu for Fathers Day

If you father of spouse is not with you anymore, or if you are all by yourself, I see no reason why you cannot commemorate this significant date. Here is a Menu just for you or for you & your pardner. Happy Fathers Day!
ONION-POTATO SOUP
2 tb butter
1 small onion sliced thin
1 medium potato, peeled and thinly sliced
1 cup hot chicken broth
2 peppercorns, crushed
2 whole allspice, crushed (or a pinch of ground allspice)
1/4 cup finely chopped celery tops
2 tb heavy cream
salt and ground pepper to taste
Melt butter in saucepan. Add onion and potato and saut , stirring, for 5 minutes. Stir in the chicken broth, peppercorns and allspice. Bring to a boil, cover and simmer for 30 minutes, or until potatoes are tender. Beat soup with a whisk until potatoes are broken up into tiny pieces. Add the celery tops and the cream. Heat and season to taste with salt and pepper. About 2 cups.
ITALIAN STEWED PORK WITH CELERY
1 garlic clove, thinly sliced
1 tb olive oil
1 carrot, chopped
1 lb lean pork, cut as for stew
1/2 cup dry white wine
salt to taste
ground pepper to taste
1/2 cup thinly sliced celery
1/2 cup red bell pepper, chopped
1 tomato, peeled and chopped.
Saute in the olive oil the garlic, carrot, pork, wine, salt and pepper. Cover and cook on low heat for 45 minutes. Add the celery, red bell pepper and tomato and cook for another hour, or until the meat and vegetables are tender. During the last 10 minutes sprinkle 1 tsp all purpose flour over the stew, to thicken the sauce. Adjust seasonings before serving. Serve over white rice or over pasta, cooked according to package directions, and saut ed with butter and parsley.
SAUTEED PORTOBELLO MUSHROOMS
1 tb olive oil
1/4 lb sliced portobello mushrooms
1/2 tsp lemon juice or Real lemon
salt and ground pepper or Tabasco
Pinch of Oregano
2 garlic cloves thinly sliced
cilantrillo, chopped, to taste
Saut the mushrooms in the olive oil. Add the lemon, cilantrillo and garlic cloves, and saut over medium heat for 5 minutes or until just tender. Season with salt, pepper and oregano. Serve as a side dish with the stew.
For dessert, individual cheesecake slice, & some quantr .
