Recipe: Sour Cream-Coconut Wafers (slice-and-bake cookies) - 1960's

SOUR CREAM-COCONUT WAFERS

3 cups sifted all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
3/4 cup butter, softened
1 cup brown sugar
2 eggs, beaten
1 1/2 tsp vanilla extract
1/4 tsp orange extract
1/3 cup sour cream
1 cup (3 1/2 oz) flaked coconut

Sift together flour, baking powder, salt and baking soda; set aside.

Cream the butter and brown sugar together until light and fluffy. Add beaten eggs, vanilla extract and orange extract; beat well. Blend in about half of the flour mixture. Add sour cream; mix thoroughly. Then blend in remaining flour mixture. Add coconut; mix well. Shape dough into rolls, wrap in waxed paper, and chill overnight in refrigerator.

WHEN READY TO BAKE:
Cut in slices 1/8 to 1/4-inch thick. Arrange on lightly greased baking sheets.

Bake in a moderately hot oven (400 degrees F) for about 10 minutes.

Makes 8 dozen cookies
