Recipe(tried): Spaghetti Pie - Tonight's Dinner has to be

fast and easy. We received a call last night that we must fly to Vero Beach, Fla. I have and elderly uncle there that is ill, so today has been filled with making travel plans, packing, etc. Not much time for food preparation so we are having Spaghetti Pie, tossed salad, French bread, fresh fruit and chocolate frosted blondies.

Spaghetti Pie

Cook enough spaghetti to obtain 3-4 cups cooked, drain. (About 7-8 oz.) Add 2 Tbsp. butter to hot spaghetti, stir in 1/3 cup grated Parmesan cheese and 2 beaten eggs. Push into a pie crust shape in a well buttered deep 10" pie plate.

Spread 1 cup cottage cheese on "crust".

Cook 1 pound ground beef, 1/2 medium onion, chopped and 1/4 green pepper, chopped. Drain fat.

Stir in 8 oz. can chopped tomatoes with juice, 6 oz. tomato paste, dash of sugar, 1 clove garlic, chopped, 1/2 tsp. oregano or basil(dry), salt and pepper to taste. Sauce will be thick.

Put meat sauce into crust, bake at 350 degrees for 25 min. Top with shredded mozzerella cheese and return to oven until cheese is melted.

Remove from oven, let stand for 5 min., cut into wedges and serve.

I'm using up some of the freshables in the salad and fruit cup before we take off on our trip. The blondies are left over from Sunday.
