This is a fantastic recipe that has been a family favorite for years. I have never met anyone that wasn't crazy about this veggie loaf we call "Special K Loaf". I have decided to share this recipe as it can be difficult to find good food for vegetarians as I have developed my own recipes for the last 30 years. Hope you like it as much as I have!
SPECIAL K VEGGIE LOAF
6 cups Special K Cereal
24 oz. cottage cheese
1/4 cup vegetable oil
1 medium egg
1 envelope Lipton Onion Soup Mix
1/2 medium onion (optional)
1/4 cup walnuts - finely chopped (optional)
Stir all ingredients until blended but do not over stir. Spread out in glass casserole dish or 13 x 9-inch metal cake pan.
Bake at 450 degrees F for 30 - 35 minutes or until crispy around edges. Loaf should have consistency of baked Thanksgiving stuffing.
Best served as a loaf with rice or potatoes and vegetable side dishes.
OPTIONAL GRAVY
1 can condensed cream of celery or cream of mushroom
1/2 cup water
Heat to serving temperature to pour over Special K Veggie Loaf.
