SPICEY SPAGHETTI BOLOGNAISE
2 tbsp vegetable oil
1 large white onion, finely chopped
3 small green finger chillies, finely chopped
1 large bag of quorn mince (meat substitute)
1 red pepper, chopped
1 green pepper, chopped
1 small tin of red kidney beans
1 large tin chopped tomatoes
1 packet of spaghetti pasta
pinch of salt and pepper (to taste)
grated cheese (optional)
Heat oil in a pan. Add onion and chillies and saute over low heat until onions are clear, taking care not to burn the chillies.
Add the quorn mince to pan, stir well and let it absorb all the flavour of the chillies and onion for around 4 minutes.
Now turn up the heat a little. Add the red and green peppers to the pan along with the red kidney beans.give it a good stir and add the tined tomatoes. Turn the heat back down to low and let it simmer for around 10 minutes.
While that's finishing off take the pasta and cook following guidlines on the packet.
Once pasta is cooked turn off the sauce. Drain and rinse the pasta and serve.
A really yummy tip is to sprinkle grated cheese on the top.
