Recipe: Joe Froggers (big molasses cookies using rum, 1950's)

"Uncle Joe, who lived in a cabin by the frog pond in Marblehead, Mass., originally baked these spicy sweets for local fishermen. They bought enormous batches to stock their galleys for long trips. Good keepers these cookies! The name? It's just one of those things. The big fiat cookies were remindful of the big fat frogs that sat on the lily pads in Uncle Joe's pond."

7 cups sifted flour
1 tablespoon salt
1 tablespoon ground ginger
1 teaspoon ground cloves
I teaspoon nutmeg
1/2 teaspoon allspice
3/4 cup water
1/4 cup rum
2 teaspoons baking soda
2 cups dark molasses
1 cup shortening
2 cups sugar

Sift flour with salt, ginger, cloves, nutmeg and allspice.

Combine water with rum.

Combine soda with molasses.

Cream shortening and sugar. Add sifted dry ingredients, water mixture and molasses mixture in two sections to creamed mixture, blending well after each addition. Chill dough, preferably overnight.

Roll to 1/4-inch thickness on floured surface. Cut with 4-inch cutter. Place on greased baking sheet.

Bake at 375 degrees F for 10 to 12 minutes. Let stand on sheet a few minutes before removing to prevent breaking. Store in a covered cookie jar.

Makes 2 dozen (5-inch) cookies
