Recipe: Potato Vegetable Chowder

POTATO VEGETABLE CHOWDER

3 tablespoons butter or margarine
1/4 cup chopped onion
3 tablespoons flour
1 teaspoon chicken bouillon granules
1/4 teaspoon dried thyme
1/8 teaspoon pepper
2 cups milk
1 cup water
2 cups diced potatoes, cooked and peeled
1 cup cubed cooked ham
9 ounces Green Giant Harvest Fresh frozen mixed vegetables, thawed

Melt margarine in large saucepan over low heat. Stir in onion; cook until tender.

Stir in flour, bouillon, thyme and pepper. Cook until mixture is smooth and bubbly.

Gradually stir in milk and water; cook over medium heat until mixture boils and thickens, stirring constantly.

Add potatoes, ham and vegetables. Reduce heat; simmer 10 minutes or until vegetables are tender, stirring occasionally.

MICROWAVE DIRECTIONS:
In 3-quart microwave safe casserole, microwave margarine on HIGH for 30 seconds or until melted. Stir in onion; microwave on HIGH for 1 to 2 minutes or until tender. Add flour, bouillon, thyme and pepper; blend well. Microwave on HIGH for 30 seconds. Stir in milk and water. Microwave on HIGH for 7 1/2 to 10 minutes or until mixture boils, beating with wire whisk twice during cooking. Stir in potatoes, ham and vegetables. Microwave on HIGH for 5 to 6 minutes or until vegetables are tender, stirring once halfway through cooking.
