Pomegranate seeds can be frozen up to 3 months, but should only be used for juicing after freezing. The breakdown of pomegranate seeds during the thawing process will cause the seeds to emit juice. To make pomegranate juice, puree the seeds and strain so that the shell bits separate from the juice. Note that previously frozen pomegranate seeds are not fit for eating in a seed form.
