Recipe: Split-Second Burritos (using ground beef and refried beans, microwave)

SPLIT-SECOND BURRITOS

1 pound ground beef
1 onion, chopped
2 tablespoons chili powder (or to taste)
1 can refried beans
6 large flour tortillas
1 (8 ounce) can enchilada sauce
2 cups shredded Cheddar cheese
FOR SERVING:
Salsa
Sour cream
Black olives

Brown ground beef and onion in skillet. Mix in chili powder.

Microwave tortillas for 30 seconds just to soften.

Divide beans and meat onto the 6 tortillas. Fold tortillas over meat/bean mixture and place in microwave dish, seam side down. Top with enchilada sauce and cheese.

Microwave 2 to 4 minutes (cooking time will vary with different microwaves), until cheese is melted and burritos are heated through.

Top according to taste with salsa, sour cream and black olives.

Makes 4-6 servings
