STRAWBERRY CONFECTIONS
1 can (14 oz) sweetened condensed milk
2 cups sweetened flaked coconut
2 teaspoons almond extract
2 packages (3 oz each) strawberry flavored gelatin
1/4 cup sifted confectioners' sugar
1/2 teaspoon milk
3 to 4 drops green food coloring
In a mixing bowl combine the sweetened condensed milk, coconut, almond extract, and 1 package of the strawberry gelatin. Stir until well blended; refrigerate for about 1 hour, or until set.
Using 1 tablespoon at a time, form mixture into strawberry-shaped balls. Roll in remaining dry gelatin powder.
Combine powdered sugar, milk and food coloring to make a stiff paste, then make a green 'stem' for each berry. Refrigerate for 1 hour before serving.
Makes 60 strawberries.
