PEANUT BRITTLE CANDY
2 cups sugar
1/2 cup water
1 cup Karo corn syrup
2 sticks butter (1 cup)
2 cups peanuts (salted) with skins
1 tsp baking soda
Combine sugar, corn syrup, and water in a saucepan and bring to boil, stirring constantly.
Put butter in and stir until melted. Boil to 285 degrees F on a candy thermometer.
Put peanuts in and stir constantly to 305 to 310 degrees F. Quickly remove from heat and beat in baking soda.
Quickly spread on 2 greased (I use Pam) cookie sheets or Silpat ungreased pushing to the edges of pans. Cool on wire rack, crack as soon as possible after cooling. Best if left in the open for a day or two.
Have never had a bad batch.
