Recipe: Onion Rings (baked using buttermilk, egg whites and corn flake crumbs)

3 large onions, sliced 1/4-inch thick
1 cup buttermilk
1/2 cup all-purpose flour
1 teaspoon paprika
1/2 teaspoon salt
4 egg whites
1 1/2 cups corn flake crumbs
Separate the onions into rings and mix with the buttermilk in a large bowl to coat. Stir occasionally and set aside at least 20 minutes.
Preheat oven to 375 degrees F. Spray a baking sheet with nonstick vegetable spray.
In a shallow dish, stir together the flour, paprika and salt. In a second shallow dish, lightly beat the egg whites. In a third shallow dish, add the corn-flake crumbs.
Dip each onion ring first in the flour mixture, next in the egg whites, and then in the corn flake crumbs to coat. Place on the prepared baking sheet. Spray the onion rings with nonstick spray.
Bake in batches 15 minutes until golden. Serve immediately.
Makes 4 servings
Per serving: 245 calories, .04 grams fat, less than 1 percent calories from fat, no cholesterol, 777 milligrams sodium.
