Recipe: Stuffed pumpkin recipe

Hi Nancy. I haven't tried this yet but it's from a caterer called Susan Mendelson in Vancouver. I was thinking you could just stir fry some ground beef or strips of chicken and add it if you wanted a non-vegetarian recipe.
Cut off top of one pumpkin and remove seeds.
Mix together 1 cup tamari sauce and 1 tblsp. Worcestershire sauce, pour into pumpkin and let stand (she doesn't say for how long). Bake in oven at 350 degrees F for 20 min.
Stirfry 1 large eggplant, cubed, 4 carrots, cubed, 1 onion, chopped, and 1 large clove garlic till eggplant is soft.
Add to stir fried vegs. 2 cups beans, 1 cup roasted pumpkin seeds, 2 cups brown rice and 1/2 cup Marsala wine.
Fill centre of pumpking with vegs. and bake in oven at 425 degrees F for 1 hour until skin is bubbly.
Serves 8.
