Recipe(tried): Sunday Dinner at Our House - Buttermilk Scalloped Potatoes, Mama's Mini Angel Biscuits

Hi, everyone! Kristin brought one of her friends home for the weekend and she wanted me to fix some of her favorites for lunch today.

We have a convenience store that makes the best fried chicken and chicken strips. Kristin LOVES this chicken so we had it, zipper cream peas, Buttermilk Scalloped Potatoes, Mama's Mini-Angel Biscuits with butter, sweet tea with lemon, pickled beets, CLAUSSEN Pickles, and Mrs. Smith's Deep Dish Peach Pie for lunch.

Here are the recipes:

BUTTERMILK SCALLOPED POTATOES

4-6 medium Idaho potatoes, washed, peeled, and sliced thinly
1/4 cup flour
1 tsp. salt (I used seasoned salt)
1 medium onion, chopped
2 T. butter
2 cups buttermilk
1 1/2 cups grated Cheddar cheese

Preheat oven to 350 degrees.

Spray a 9X13" pan with PAM. Place the thinly sliced potatoes into the sprayed PAM.

Place chopped onion and butter into a microwave-safe bowl. Saute on High for 3-4 minutes or until onion is transparent and butter is melted.

Add flour to onion/butter mixture. Microwave on high for 1 minute. Add the buttermilk and mix thoroughly. Add the cheese after mixing in the buttermilk. Pour buttermilk/cheese over the potatoes. Sprinkle with salt and pepper.

Bake in oven for 1 hour. Taste to make sure that the potatoes are cooked. If potatoes are not done, place the baking dish back into the oven and bake for another 15-20 minutes.

MAMA'S MINI ANGEL BISCUITS

5 cups self-rising flour
1/4 cup sugar
1 tsp. baking soda
3/4 cup shortening
2 envelopes dry yeast
1/4 cup warm water
2 cups buttermilk, at room temperature

Sift flour, baking soda, and sugar into a large bowl. Cut in shortening until crumbly. Dissolve yeast in warm water. Add yeast and buttermilk to flour mixture; mix well.

Spray 2 mini muffin pans with PAM. Fill mini- muffin tins leaving some room for the biscuits to rise. Allow the muffins to rise for 20-30 minutes.

Preheat oven to 400 degrees. Bake the muffins for 5-7 minutes or until muffins are golden brown. Serve warm with butter.

***This mixture can be put into a Zip-Loc Bag and stay in the refrigerator for a week until you would like to bake the rest of the biscuits.
