Recipe(tried): Sunday Dinner at Our House: Easy Roast Turkey Breast, Mama's Dumplings, Strawberry Shortcake
Main Dishes - Chicken, Poultry Today was an absolutely beautiful spring day. We celebrated the beautiful day by having wonderful spring vegetables for lunch. Today we had: Easy Roast Turkey Breast, gravy, new potatoes, fresh string beans, squash, sweet tea with lemon, Mama's Dumplings, CLAUSSEN Pickles, and strawberry shortcake.
After lunch, I stripped all of the meat off of the turkey breast. Put the bones, skin, chopped onions, chopped garlic, and chopped celery in the crockpot along with water, a splash of white wine, poultry seasoning, garlic powder, seasoned salt, and pepper. This cooked all afternoon and now I have some wonderful chicken stock.
EASY ROAST TURKEY BREAST
6-7 lb. turkey breast (I use Jennie-O or Honeysuckle)
3 chopped onions
4 stalks chopped celery
7 cloves of minced garlic
1 apple, cored and sliced
poultry seasoning
garlic powder
pepper
thyme
rosemary leaves
1 Tbsp. flour
1 Reynolds Plastic Cooking Bag
Preheat oven to 325. Wash the turkey breast and pat it dry. Stuff the cavity of the breast with an assortment of garlic, onions, celery, and some apple slices. Put the flour in the cooking bag and shake thoroughly. Place the rest of the vegetables and apple slices in the cooking bag. Put the turkey breast inside of the bag on top of the vegetables/apple slices. Season with the poultry seasoning, rosemary leaves, thyme, garlic powder, pepper, and seasoning salt. Pour 1/2 cup of white wine around the turkey breast. cut 6 1" holes in the cooking bag. Cook for 2 1/2-2 3/4 hours. Let the turkey breast "rest" for 10 minutes before slicing.
MAMA'S DUMPLINGS
4 quarts chicken broth (homemade is best!)
1 large can cream of chicken soup
seasoned salt
pepper
1 pkg. of frozen dumplings broken into thirds
Mix the broth and the soup together. Pour into a large pot and bring to a rolling boil. Place the dumplings in the pot one at a time. Stir the mixture after all of the dumplings have been added. Season with seasoned salt and pepper. Reduce the heat to medium and cook for 30-35 minutes or until dumplings are tender.
****We have a friend who uses flour tortillas as her dumplings. She cuts them into small squares and adds them to her broth mixture. I've never tasted dumplings made this way, but she says that they are delicious!
STRAWBERRY SHORTCAKE
1 angel food cake, already baked
3 pints of strawberries, washed, sliced, and sprinkled with sugar
whipped cream (I got the light kind that was in the "squirt" bottle).
Arrange cake slices on dessert plates. Place strawberries on cake and some around the piece of cake. Top with whipped cream.
This dessert is easy and tastes like heaven!
