Recipe(tried): Sunday Dinner at Our House - Meatloaf - Alabama Style, Microwave Corn on the Cob, Best Cake Brownies

Hi, everyone! Today for lunch we had: Pizza Meatloaf, macaroni and cheese (from a box), cauliflower with red pepper strips, sliced cucumbers, sliced tomatoes, Microwave Corn on the Cob, sweet tea with lemon, garlic bread, CLAUSSEN Pickles, and Best Cake Brownies.

I saw several recipes for meatloaf that I wanted to try, but none of them were exactly what I wanted. This recipe is an original--using the best ingredients from several meatloaf recipes.

PIZZA MEATLOAF--ALABAMA STYLE

2 lbs. ground chuck
1 cup bread crumbs--I used Oat and Almond Bread to make the bread crumbs
2 eggs
1 pkg. Lipton Onion Soup Mix (dry)
1/4 cup pizza sauce
1/2 tsp. black pepper
1/2 cup SARGENTO Pizza Double Cheese Blend--mozzarella and cheddar cheese blend
1/2 cup chopped onions
2 tsps. minced garlic
1 cup pizza sauce
1 cup SARGENTO Pizza Double Cheese Blend

Combine ground chuck, bread crumbs, eggs, onion soup mix, pizza sauce, black pepper, 1/2 cup of cheese, chopped onions, and minced garlic. Make into a loaf. Put in a greased 8" baking dish. Bake, uncovered, at 350 degrees until a meat thermometer reads 160; drain. Spread 1 cup of pizza sauce on the top. Sprinkle with SARGENTO Pizza Double Cheese Blend. Bake 10 minutes longer or until cheese has melted. Let stand for 10 minutes before slicing.

MICROWAVE CORN ON THE COB

Inspect corn to make sure that there are no bugs, etc. in or on the corn. Place corn, with husks and silk, into microwave. Microwave on HIGH for 6-7 minutes. Remove the corn from the carefully. Remove the husks and silk from the corn. Serve with butter, salt, and pepper.

This is easily the quickest and best way to cook corn on the cob!

BEST CAKE BROWNIES

1/2 cup butter, softened
1 cup sugar
4 eggs
1 can (16 oz.) chocolate syrup
1 tsp. vanilla extract
1/2 cup chopped pecans
1 cup self-rising flour

In a mixing bowl, cream sugar and butter. Add eggs, 1 at a time, beating well after each addition. Beat in chocolate syrup and vanilla extract. Add the flour and stir until well blended. Pour into a greased 9"X13" baking pan. Bake at 350 degrees for 20-25 minutes. Cool 15-20 minutes before cutting.

***Tip for used egg shells--After fixing lunch, I had six egg shells. I crushed the egg shells and put them in a quart jar along with some water. Tomorrow, I will pour the water/eggshell mixture on my plants. The plants love the eggshell/water combination.!

*****Tip for using styrofoam egg cartons--Wash the egg carton and let dry.

When repotting plants, cut the styrofoam egg cartons into small pieces. Put in the bottom of a pot. Layer potting soil on top of the styrofoam. Add the plant and enough potting soil to fill it to the top.

The styrofoam egg cartons will allow the plant to drain well. The cartons will also allow you to use less potting soil making the pot lighter.

You may also use the packing styrofoam "peanuts" in the bottoms of pots.
