Recipe(tried): Sunday dinner - Chinese Smoked Chicken, Chinese Spaghetti

Hubby called home today to say he'll be home all day tomorrow and he's hungry for Chinese. I have a whole chicken marinating and plan to serve a noodle dish we love and stir friedegies. I love this kind of meal that I can get all the prep work done early in the day and lounge for the rest of it. Haven't decided yet what I'll do for dessert or if I'll have one. Maybe I'll serve hot popovers with honey with the meal and call it good.

Chinese Smoked Chicken

6 TBSP. Soy Sauce
3 TBSP. Hoisin Sauce
2 TBSP. dry white wine
1 bunch green onions, chopped
1 TBSP. brown sugar
1 TBSP. fresh ginger, finely minced
1 tsp. liquid smoke
1 3-3/4 lb. whole chicken

*Wash chicken and put into oven cooking bag. Mix rest of ingredients and pour into chicken cavity and over the chicken. Seal tight. Refrigerate overnight, turning occasionally. Next day, put bag in shallow pan and poke 5 holes into the top of it.Bake at 350 degrees for 1-1/2 hours. Serve with extra hot marinade for dipping if desired.

(it's so simple to stir this up for the next day while doing dinner dishes and it's a snap to throw in the oven the next day. The marinade smells really strong but it gives a surprisingly delicate flavor.)

Chinese Spaghetti

1 7oz. pkg. vermicelli
1/4 cup oil
1/2 lb. fresh mushrooms, sliced
1 bunch green onions, chopped
1 medium carrot, julienned
1/4 cup soy sauce
1/2 tsp. sugar
1/4 tsp. crushed red pepper

* Cook vermicelli. Drain with hot water. In medium hot oil, saute carrots till tender crisp. Aff mushrooms and green onions. Mix with vermicelli. Mix soy sauce, sugar and red pepper. pour over and toss gently to mix. This is good hot or cold.
