Recipe: Sunshine Cake (using cake mix, mandarin oranges, pudding mix, and Cool Whip)

SUNSHINE CAKE

CAKE:
1 pkg. yellow cake mix
3 eggs
3/4 cup oil
1 (11 oz) can mandarin oranges and juice
TOPPING:
1 (20 oz.) size (undrained) crushed pineapple and juice
1 (3 oz.) pkg instant vanilla pudding mix
1 tsp. vanilla
1 (8 oz.) container Cool Whip, thawed

CAKE:
Preheat oven to 350 degrees F. Grease a 9x13-inch baking pan.

Beat together the cake mix, eggs, oil, and mandarin oranges with juice for 3 minutes. Pour into prepared pan.

Bake at 350 degrees for 30 to 35 minutes. Cool in pan on rack.

TOPPING:
Mix pineapple, dry pudding mix, and vanilla together thoroughly. Fold in Cool Whip. Spread on cooled cake and refrigerate.
