SWEET AND SPICY JERK RIBS
2 racks pork baby back ribs
3 tbsp olive oil
1/3 cup Caribbean jerk seasoning
3 cups honey barbecue sauce
3 tbsp apricot preserves
2 tbsp honey
Cut the ribs into serving-size pieces. Brush with the olive oil; rub with the jerk seasoning. Place in a 5 or 6 quart crock pot.
Combine the remaining ingredients and pour over the ribs.
Cover the crock pot and cook on LOW for 6 to 8 hours or until the meat is tender. Skim the fat off of the sauce before serving.
