Recipe: Sweet Pimento Cheese for Troi

SWEET PIMENTO CHEESE

1 lb Velveeta cheese
1 small can pimentos
1 tablespoon salad dressing (Miracle whip)
DRESSING:
1 egg
1/2 cup pineapple juice
1 tablespoon vinegar
1/2 cup sugar

Melt the Velveeta, pimentos, and Miracle Whip together in a double boiler.

Combine the ingredients for the dressing together in a saucepan and cook over medium heat, stirring until thick.

Cook this over medium heat until thick.

Mix cheese mixture and dressing together while hot.

Notes:
This is a great snack to eat on crackers.
