Recipe: Sweet Potato Apple Casserole

Sweet Potato Apple Casserole

4 med. sweet potatoes, peeled and sliced =BC inch thick
3 granny smith apples peeled and sliced =BC inch thick
3 cups mini marshmallows
1 cup sugar
1 tsp. salt
1 tsp cinnamon
1/2 cop chopped pecans
2 Tbsp cornstarch
1/2 cup water
1 Tbsp butter

Preheat oven to 350 . Butter a 9x13-inch baking pan. Lay all slices of sweet potatoes, overlapping, on bottom of pan. Cover with layer of all the apples. Top this with the mini-marshmallows. Combine sugar, slat, cinnamon and pecans. Sprinkle over base in pan. Stir together cornstarch and water. Pour over pan contents. Dot with butter. Cover with aluminum foil and bake for 1 hour. Let cool slightly and serve.
