Recipe: Sweet Potato Stuffing (using canned sweet potatoes and cornbread)

SWEET POTATO STUFFING

1/2 cup raisins
2 cups canned sweet potatoes, diced
2 cups cornbread, crumbled
1 tablespoon butter or margarine, melted

Soak raisins in hot water for 1 hour; drain.

Preheat oven to 350 degrees F.

Mix all ingredients together. Put into greased casserole dish.

Cover, and bake until heated through.

Uncover and bake an additional 5 minutes to brown top.

Servings: 8
