Recipe: Taco Lasagna (using tortillas, ground beef , and cottage cheese)

6 to 8 large soft flour tortillas, divided use
1 (16 ounce) can refried beans
FOR THE FILLING:
1 pound ground beef
1 package taco seasoning
1 (14 1/2 ounce) can diced tomatoes with onions and mild green chilies
2 cups small curd cottage cheese
1 cup shredded taco cheese
1 large egg
FOR SERVING:
1/2 cup shredded cheddar cheese
2 cups shredded lettuce
1/2 cup chopped tomatoes
3 green onions, sliced
sour cream (optional)
Preheat oven to 350 degrees F. Grease a 13x9-inch baking dish.
In prepared baking dish place two large tortillas (or enough to cover bottom of pan). Spread refried beans over tortillas; set aside.
Brown the ground beef; drain. Add taco seasoning and canned tomatoes; mix well. Spread beef mixture over beans in baking dish. Add a second layer of tortillas.
Mix together the cottage cheese, taco cheese and egg. Spread this mixture over tortillas. Top with final layer of tortillas, trimming edges to fit.
Bake at 350 degrees F for 30 minutes.
Garnish pieces of lasagna with grated cheddar, lettuce, tomatoes, green onions. Serve with sour cream, if desired.
Serves 6 to 8
