Recipe(tried): Taco Soup

TACO SOUP

2 pounds ground beef
1 medium onion, finely chopped
1 can (28-ounce) tomatoes
1 can (15-ounce) tomato sauce
1 cup water
1 can (15-ounce) pinto beans, rinsed and drained
1 can (14-16-ounce) whole kernel corn, drained
1 1/2 envelopes taco seasoning mix
cheddar cheese, shredded
avocado, sliced
tomato, chopped
corn chips or tostidos

1. In a large saucepan or a Dutch Oven, brown beef and onion; drain.

2. Puree tomatoes in their own liquid; add to pan with tomato sauce, water, beans, corn and taco seasoning. Bring to a boil. Reduce heat and simmer for 5 minutes. If desired, top each serving with cheese, avocado and tomato. Serve with chips.

Yield: 10 servings (2 1/2 quarts)
