Esp rragos al Jamon -Ham Asparagus Rolls
(Serves 4-5 (2 oe 3 wrapped asparagus each)
Serve with a dry white wine.

1 ib. canned cooked white asparagus
1/4 cup mayonnaise
1/4 lb. boiled ham, sliced thin
2 hard boiled eggs chopped
1 small can red pimentos

Place a dab of mayonnaise on each asparagus stalk. Wrap a slice of ham (1 1/2 or 2 turns around 1-3 asparagus, depending on size. Sprinkle with chopped hard-boiled eggs & lay a strip of pimento on each.
