Recipe: Apple Pecan Buttermilk Pancakes (using cinnamon and cardamom)
Breakfast and BrunchAPPLE PECAN BUTTERMILK PANCAKES
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 tablespoons sugar
2 eggs, slightly beaten
2 cups buttermilk
2 tablespoons butter, melted
Pinch cardamom
1 teaspoon ground cinnamon
2 Golden Delicious apples, peeled, chopped, and sauteed in 1 tablespoon butter
1/2 cup toasted pecans
Butter and maple syrup (for serving)
Sift flour, baking soda, salt, and sugar into mixing bowl.
Combine egg, buttermilk, and melted butter. Add spices. Do not overmix. Add sauteed apples and pecans.
Bake on hot, lightly greased griddle.
Serve hot with butter and real maple syrup.
Makes 6 servings
