Recipe: TAPA: Cheese & Potato Balls-Bolas de Queso y Patatas

Cheese & Potato Balls-Bolas de Queso y Patatas
Serve with dry white wine or ice cold beer
Serves 8

1/2 cup flour
1 tsp double acting baking powder
1 egg beaten
2 cups mashed potatoes
1 cup young Manchego cheese or other soft cheese grated
Oil for deep frying

Add flour, baking powder & beaten egg to mashed potatoes & mix well. Stir in cheese & form into 1 inch balls. Drop each ball into hot oil & deep fry at 375 F, turning once, for 4 minutes or until golden & puffy. Drain & serve warm or cold, several balls in each tapa saucer.

Variation:
For added texture, roll cheese balls in fine bread crumbs before frying.
