Good Morning. Do it like the restaurants do it. Cover the chicken with buttermilk overnite in the fridge. Then simply continue with your recipe, if you want to have juicy chicken use a chef's thermometer & cook to 168 to 172 degrees when placed in the thick part of the breast. Good luck , ~Chef Dunask.
