Tequila-Lime Shrimp

1 pound med. shrimp
3 tablespoons butter or margarine
1 tablespoon olive oil
2 cloves garlic -- minced
2 tablespoons tequila
1 tablespoon lime juice
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
3 tablespoons chopped fresh cilantro
hot cooked rice
lime wedges

Clean, shell, and devein shrimp. Pat dry with paper towels. Heat butter and oil in skillet to med. heat. Add garlic and cook 30 sec. Add shrimp, cook 2 min., stirring. Stir in tequila, lime juice, salt and pepper flakes. Cook 2 min. or until most of the liquid has evaporated and shrimp are pink and glazed. Add cilantro, cook 10 sec. Serve over rice and garnish with lime wedges.

Tequila Shrimp with Citrus Sauce

TEQUILA SHRIMP (Shrimp with Tequila-Citrus Sauce)
From the Old Mexico Grill in Santa Fe.

INGREDIENTS (serves 2)

8 jumbo shrimp (peeled & deveined)
2 Tbsp clarified unsalted butter
3 oz tequila
1/4 tsp minced garlic
1/4 tsp ground black pepper
1 1/2 oranges (juiced)
2 limes (juiced)
3/4 cup heavy cream

(1) Heat butter in medium saute pan until hot. Add shrimp and cook on both sides until slightly undercooked. Add garlic and reduce heat to medium.

(2) Stand back -- add tequila and let flame for 30 - 45 seconds.

(3) Add orange and lime juices, salt and pepper. Reduce for 1 - 2 minutes. Add cream and let boil until reduced to a thick sauce.

NOTES
I found it best to remove the shrimp after adding the citrus juices. Otherwise, they were overcooked by the time I'd reduced the sauce.

Margarita Shrimp 2

Margarita Marinade
1/4 cup tequila
1 tablespoon finely chopped parsley
2 tablespoons lime juice
2 tablespoons oil
1 tablespoon honey
1 teaspoon grated orange peel
1/4 teaspoon hot pepper sauce

Kabobs
24 large fresh shrimp, shelled, tails left on -- deveined
2 medium limes

In a large non-metal bowl or plastic bag, combine all marinade ingred.; blend well. Add shrimp; turn to coat. Cover dish or seal bag; refrigerate 1-3 hrs.

Heat grill. Let shrimp stand at room temp. 30 min. Cut limes into 1/2" thick slices and cut slices into fourths to make 18 pieces. When ready to barbecue, drain shrimp, reserving marinade. On each of six (12-14") metal skewers, alternate 4 shrimp and 3 lime pieces.* Oil grill rack. Place kabobs on gas grill over med heat or on charcoal grill 4-6" from med-high coals. Cook 6-10 min. or until shrimp turn pink, turning once and brushing frequently with marinade.

NOTES : * Tip: To prepare recipe in grill basket, cut limes into slices. Place lime slices and shrimp in oiled grill basket. Cook as directed above.

Tequila Shrimp

1 1/4 lbs jumbo shrimp shelled, deveined, butterflied, tails intact
1/2 Cup tequila
1/2 teas. crushed dried hot chiles
1/2 teas. coarsely ground coriander seed
2 Cups fresh orange juice
1/2 Cup fresh lime juice
1 T chopped cilantro
2 T unsalted butter, softened

In a stainless steel or ceramic bowl, mix the shrimp, tequila, 1/4 teaspoon of dried chiles and the coriander seeds. cover tightly and chill overnight. Drain the shrimp, reserving 1/4 of the liquid. In a saucepan, combine the reserved liquid, remaining dried chile, orange and lime juices. Bring liquid to a boil, reduce heat, and reduce liquid to about 3/4 cup. Add cilantro. Return to boil, then transfer to serving bowl.

Coat shrimp with butter, then thread on skewers and broil/grill.

serve on a bed of lettuce leaves, with sauce.Garnish with orange and lime slices.
