Stir in the cilantro. (oh I forgot to add the flour tortillas to the ing. list)
You can spoon this mixture onto the tortillas and add you favorite cheese ( ours is Colby/Jack)Sour cream and hot salsa is a good topping if you like it.
Tex-Mex Chicken & Rice Chili Roll-ups
1 package (6.8oz) Rice-a roni Spanish rice
2/34 cups water
2 cups chopped chicked
1 can (15 oz) kidny OR pinto beans, rinsed and drained
1 can (14 1/2 oz) diced tomatoes (stewed if you don't like chunky)undrained
1 med green bell pepper, chopped
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
1/2 cup shredded cheese (your choice)
Sour cream (optional)
Combine rice-a-roni, Water, seasoning packet and all ingredients except the cheese and sour
cream. Bring to a boil. Reduce heat to low, simmer about 20 minutes-uncovered, stirring occ.
spoon into tortillias and top with cheese and tomatoes (or anything you prefer.
