Recipe(tried): Thai Papaya Salad

Thai Papaya Salad
This salad is delicious served with steamed sticky rice (glutinous rice). The papaya used must be unripe, green and firm.

1 medium dark green papaya/paw paw
4 garlic cloves (kratiem)
6 green Thai chilies/bird’s eye chilies (prik khee noo)
2 ripe tomatoes, cut into wedges
cup chopped green beans, in 1” pieces, poached
2 T. fish sauce
c lime juice or tamarind juice (ma-kaam piag)

Peel the papaya and rinse with running water to remove the acid. Remove the seeds and shred the papaya with a grater. Set aside.
Place the garlic cloves and the chilies in a mortar and mash remaining ingredients in the mortar and gently combine all ingredients by mixing with the pestle and a spoon. Serve cold.
** Or you may use a food processor or blender if you don’t have a mortar and pestle
