Recipe: No-Cook Strawberry Jam with Variations (Certo recipe, freezer jam)
Preserving - Jams, Jellies NO-COOK STRAWBERRY JAM
1 3/4 cups prepared fruit (about 1 quart fully ripe strawberries)
4 cups sugar
1 pouch CERTO liquid fruit pectin
2 tablespoons lemon juice
Stem and thoroughly crush berries, one layer at a time.
Measure 1 3/4 cups prepared fruit into a large bowl. Add sugar to fruit and mix well. Let stand 10 minutes.
Stir in liquid fruit pectin and lemon juice. Continue to stir for 3 minutes until most of the sugar is dissolved.
Pour into clean jars or plastic containers. Cover with tight lids and let stand at room temperature until set (may take 24 hours).
Store in freezer. If used within 3 weeks, jam may be stored in refrigerator.
CREATIVE VARIATIONS:
Minted Strawberry:
Add 1 tablespoon chopped fresh mint leaves.
Sunny Strawberry:
Add 1 tablespoon grated orange or lemon rind.
Nutty Strawberry:
Add 1/4 cup slivered almonds or chopped pecans.
Tipsy Strawberry:
Add 2 tablespoons fruit liqueur or brandy.
Lime Strawberry:
Substitute lime juice for lemon juice.
Makes 5 cups
