Recipe: Additions for Rice - Watercress, Orange-Cilantro, Lemon-Parsley, Asian, and Fluffy Lemon Rice
Misc.To make four side-dish servings to accompany stir-fried beef, chicken or shrimp, stir the following into 1 cup rice, cooked by package directions:
FOR WATERCRESS RICE:
1 cup coarsely chopped watercress leaves, loosely packed.
FOR ORANGE-CILANTRO RICE:
1/2 teaspoon grated orange peel and 2 tablespoons chopped fresh cilantro.
FOR LEMON-PARSLEY RICE:
1 teaspoon grated lemon peel and 2 tablespoons chopped fresh parsley leaves.
FOR ASIAN RICE:
(omit salt when cooking rice): 2 green onions, chopped; 2 teaspoons soy sauce; and 1/4 teaspoon Asian sesame oil.
FOR FLUFFY LEMON RICE:
Grate peel and squeeze juice from 1 large lemon. Add lemon juice and 1/4 teaspoon ground turmeric to rice as it cooks. When rice is done, stir in grated lemon peel.
