Recipe: Crunchy Herb Roasted Fish (using fresh bread crumbs)

CRUNCHY HERB ROASTED FISH

2 cups fresh bread crumbs
2 teaspoons grated lemon zest (1 large lemon)
1 red chile pepper, seeded and minced
2 tablespoons chopped flat-leaf parsley
2 tablespoons chopped fresh dill
2 tablespoons unsalted butter, melted
Salt and freshly ground black pepper
4 firm white fish fillets, about 2 pounds

Preheat oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.

In a medium bowl, combine the bread crumbs, lemon zest, chile pepper, parsley, dill, butter, salt and pepper to taste.

Place the fish fillets on the lined baking sheet. Press the herb topping over the fish.

Bake for 12 to 15 minutes or until the fish is firm and cooked through and the herb topping is crisp.
